No-refrigeration Massaman Curry

No-refrigeration Massaman Curry
7 hearty servings
 
Cook 1.75 cups dry rice to accompany the 7 servings of curry
 
Ingredients:
Simmer together while rice is cooking (about 15-20 minutes):
Two 14.5 oz cans diced tomatoes (including liquid)
One 29 oz. can sweet potatoes (drained)
One 4 oz. can Maesri masaman curry paste
1/4 cup dried minced onion
One 15.5 oz. can garbanzo beans (drained)
 
When ready to serve, stir in:
One 14 oz. can full fat coconut milk
1.5 cups frozen peas (optional)
Two 12 oz. cans pulled pork (including liquid) – mine were from Costco
 
Serve in bowls over rice
