ROTM: Irish Soda Bread
Irish Soda Bread
Submitted by Jerry Malloy
Every year around St. Patrick's Day Jerry Malloy makes Irish Soda bread using a family recipe passed down from his grandmother, Grace Tivoli, to his mother, Grace (McGinty) Malloy, to Jerry. Now Jerry is sharing with the OWA family. Thanks Jerry!
Directions
- Preheat your oven to 350F.
- Grease your pan (a glass pie pan works great).
- Add the dry ingredients (except raisins) to a bowl and mix together.
- Cut in one stick of butter using two knives until the flour looks mealy.
- Stir in raisins if using.
- Add the buttermilk and egg to the dry ingredients and stir until well mixed.
- Add to the pan and shake / spin to even it out.
- Place in oven for on hour or until toothpick comes out dry.
- To make the bread shine, brush it with milk while it's hot.
- Cool on a rack before flipping and transferring to a plate
With raisins and caraway this would be considered a "city bread" according to Jerry's paternal grandmother, Mary (Carney) Malloy, who emigrated from County Mayo Ireland to the States in 1922. Ingredients like those would be available in Dublin but not in the countryside.
